Here is a sample of the sumptuous cuisine that our Chef is creating at The Lodge. Individual items on the Menu will change from time to time, depending on the availability of the freshest produce and dining trends.

 

Menu 1

Traditional minestrone soup with a garlic parmesan crouton.

Crab and corn fritter, fennel and horseradish salad topped with smoked salmon.

Grilled beef fillet, potato mash folded with a trio of onions, and a Cognac Dijon cream sauce.

Sticky date pudding with butterscotch sauce, ice cream and almond praline.

Menu 2

Spinach and pinenut pie with hummus and kalamata olives.

Thai "Surf and Turf" salad with rare beef and five spice calamari, fresh herbs and coconut soy dressing.

Slow roasted pork neck with a warm potato and chorizo salad, roasted baby onions and a red wine glaze.

Macadamia nut brownie topped with caramelized pears, ice cream and shaved white chocolate.

Tomato and sage soup with spinach ravioli.

Salad of roasted duck, speck and red cabbage with an apple cider fritter and malt aioli.

Marinated Atlantic salmon on fried kipfler potato with a lime and dill creme fraiche.

Selection of Australian cheese, fresh sliced fruit and crackers.

Menu 4

Salad of fried haloumi, vine-ripened tomato and rocket with basil infused oil.

Risotto of fresh seafood, tomato and saffron.

Moroccan braised lamb shank, crisp sweet potato chips, lemon scented cous cous and a cumin honey.

Native Australian berry and wattle seed tiramisu.

Menu 5

Fried Tasmanian brie, mint pesto and balsamic strawberries.

Salt and pepper prawn on pickled ginger and sprout salad with Tom Yum sea scallop.

Chicken breast wrapped in basil and prosciutto on a risotto of asparagus, bocconcini and chives.

Apple rhubarb bread and butter pudding with cinnamon cardamom custard.

Menu 6

Potato and leek soup topped with fried leek.

Salad of baby cos, Snowy Mountains goat's cheese and poached egg topped with crisp kangaroo prosciutto and roasted garlic dressing.

Braised beef cheeks with Asian flavours on roasted sweet potato peanut mash and coriander pesto.

Citrus curd tart with poached oranges, mint syrup and lemon sorbet.

WHITE CHRISTMAS

Pumpkin, basil and sun-dried tomato soup.

Selection of carved roasted meats with baked vegetables, fresh salads and condiments.

Chocolate and hazelnut pudding with chocolate gnash and Frangelico creme anglaise.
